  • Unsalted shelled pistachios 
  • Sugar 
  • Milk  
  • Almond extract 
  • Large egg yolks 
  • Whipping cream 
  • Unsalted shelled pistachios, toasted, coarsely chopped. 

Directions: 

  • Crush 1 cup of pistachios and 1/4 cup of sugar finely in a food processor. Bring the milk and the ground pistachio mixture to a boil in a heavy, big saucepan. Remove the heat. Add almond extract and blend. 
  • Take a larger bowl, and combine the egg yolks with the remaining 1/2 cup of sugar. Whisk the heated milk mixture gradually. Put the custard back in the pan. Cook, while stirring, for about 10 minutes over low heat until the custard thickens. Check whether it leaves a trail on the back of the spoon when you draw a finger on it. Pour it into a wide bowl. 2 hours or so to chill thoroughly.
